Red Fife Banana Muffins Recipe

Red Fife Banana Muffins (makes around 12 muffins)

Ingredients

  • 3 ripe bananas

  • 1/3 cup avocado oil

  • 1/2 cup organic cane sugar

  • 2 eggs, room temp

  • 1 tsp vanilla

  • 1 1/2 cups Red Fife All Purpose Flour

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup chocolate chips

Instructions

  • Preheat oven to 425° F. Line muffin tin with liners.

  • Mash the banana's with a fork, then put in a bowl and add the oil, sugar, eggs and vanilla. Mix with hand mixer or in a mixer on low speed.

  • Combine Red Fife flour, baking soda and salt and add the flour mixture to the banana mixture, stir until just combined. (don't overmix)

  • Gently fold in the chocolate chips.

  • Fill each muffin cup almost to the top.

  • Bake at 425°F for 7 minutes, then reduce the temperature to 350°F and continue baking for 12 minutes. The tops should be lightly browned and a toothpick inserted should come out clean.

  • Let the muffins cool for a couple of minutes before transferring them to a cooling rack.
