
Red Fife Banana Muffins Recipe
Red Fife Banana Muffins (makes around 12 muffins)
Ingredients
3 ripe bananas
1/3 cup avocado oil
1/2 cup organic cane sugar
2 eggs, room temp
1 tsp vanilla
1 1/2 cups Red Fife All Purpose Flour
1 tsp baking soda
1/4 tsp salt
1/2 cup chocolate chips
Instructions
Preheat oven to 425° F. Line muffin tin with liners.
Mash the banana's with a fork, then put in a bowl and add the oil, sugar, eggs and vanilla. Mix with hand mixer or in a mixer on low speed.
Combine Red Fife flour, baking soda and salt and add the flour mixture to the banana mixture, stir until just combined. (don't overmix)
Gently fold in the chocolate chips.
Fill each muffin cup almost to the top.
Bake at 425°F for 7 minutes, then reduce the temperature to 350°F and continue baking for 12 minutes. The tops should be lightly browned and a toothpick inserted should come out clean.
Let the muffins cool for a couple of minutes before transferring them to a cooling rack.
