
Spelt Bread Loaf Recipe
Overview
Chewy, with a beautiful finish on the outside, this loaf will become a favorite. You will need a scale and mixer. This recipe can be doubled or tripled.
Ingredients
0.53 kg spelt flour
1 Tbs instant yeast
2 tsp salt
1 Tbs honey
350 ml warm water
Instructions
Mix flour, salt and yeast in mixer bowl with a whisk. Set aside.
Measure out the warm water in a measuring container and add the honey to it. Stir until melted.
Add to the flour mixture.
With the beater hook attached, mix the dough until incorporated. Switch to the dough hook and mix on speed 2, for 5 minutes. (set timer) Your dough will be sticky!
Put into a bowl, covered, and let rise for 1 1/2 hours, until doubled.
Pre-butter a loaf pan while waiting for the dough to rise. (9x5) (higher rise, put it in a smaller loaf pan..)
Tip dough onto surface and flatten into a square. Start at the top and pull upward and then fold down a little ways, pressing the seam closed. Repeat until you have shaped the dough into a log. Tuck ends underneath and place into buttered bread pan. Cover with a tea towel. Let rise for another 30 minutes. ( can be 45 min) You are looking for a nice, rounded top and an inch or so above the edges.
While waiting, preheat oven to 450°F
Bake for 10 minutes, then reduce oven temperature to 400°F and bake for another 20 minutes.
Tip onto cooling rack and brush the top with butter to give a beautiful shine. Let the loaf cool before slicing.
